Veggie White Pizza

What’s better than pizza? Pizza with delicious veggies and a white sauce that's so good, it will become a family favorite any day of the week.

Serves: 4-6

Ingredients:

1 package prepared pizza dough
1½ cup Humboldt organic cottage cheese
2 cloves garlic, minced
½ teaspoon salt
½ teaspoon pepper
6 oz. fresh mozzarella, sliced (or 1 ½ cups shredded mozzarella)
1 cup roma tomatoes, sliced ¼-inch slices
1 cup baby spinach
¼ purple onion, sliced thin
½ cup roasted artichoke hearts in oil, drained
¼ cup fresh basil, julienned
¼ cup parmesan cheese, grated

Directions:

Heat oven to 425 °F

Spread out dough on a greased baking sheet. Set aside.

In a small bowl, combine cottage cheese, garlic and salt and pepper. Stir to combine. Spread the seasoned cottage cheese on the pre-baked dough in a thin layer.

Top with mozzarella cheese, tomatoes, spinach, onion, artichoke and basil, saving 1 tablespoon for garnish. Top with parmesan cheese.

Bake for 15-20 minutes, or until edges are golden and cheese is melted.

Before serving, add garnish of fresh basil and freshly cracked pepper.
