Scandinavian Butter Waffles

Serve up these fluffy Scandanavian waffles — tinged with just a touch of tanginess to make these extra special.

Serves: 6

Ingredients:

2 large eggs, separated
2 1/4 cups flour
1 tablespoon baking powder
3 tablespoon sugar
½ teaspoon sea salt
1 teaspoon cardamom or cinnamon
½ cup nsalted butter, melted
2 cups buttermilk
Juice and zest of 1 lemon
1 tablespoon vanilla
1 cup heavy whipping cream
1 cup Humboldt organic sour cream
½ cup lingonberry jam
2 cups sliced strawberries
1 cup pure maple syrup
Nonstick baking spray

Directions:

Preheat waffle iron according to manufacturer's instructions.

Place egg whites in a large bowl or stand mixer. Beat until stiff peaks form. Transfer to a small bowl.

Add flour, baking powder, sugar, salt, and cardamom to the mixer. Stir together. Add butter, buttermilk, lemon juice, and vanilla. Mix just until a smooth batter is formed. Fold in the egg whites.

Spray waffle iron with baking spray. Add waffle batter and cook according to manufacturer's instructions.

In a clean stand mixer or large bowl, beat whipping cream until soft peaks form. Add lemon zest and sour cream, fold until light and fluffy.

Top waffles with whipped sour cream, a dollop of lingonberry jam, and fresh strawberries. Drizzle with maple syrup, if desired.
