PB&J Cottage Cheese Bark
Satisfy your sweet tooth with this quick, easy, and healthy snack! With swirls of creamy peanut butter, fruity jelly, and crunchy granola, this cottage cheese bark is delicious and packed with protein. This is the perfect grab-and-go treat to keep in your freezer all summer long!

Ingredients:
2 cups Humboldt Cottage Cheese
2 tablespoons pure maple syrup or honey
1 teaspoon pure vanilla extract
½ cup creamy peanut butter
½ cup grape or strawberry jelly
¼ cup granola
Directions:
Line a sheet pan with parchment paper. Set aside.
Combine the cottage cheese, maple syrup, and vanilla extract in a blender or food processor. Blend on high, occasionally scraping down the sides of the blender with a rubber spatula, just until the mixture is completely smooth.
Pour the mixture onto the parchment-lined sheet pan. Then, use a rubber spatula to spread the cottage cheese until it is about ¼-inch thick.
Add the peanut butter and jelly into two separate small bowls. Microwave each for about 20 seconds, just until the peanut butter and jelly are smooth and slightly runny.
Drizzle the peanut butter over the cottage cheese bark, followed by the jelly. Then, use a skewer or butter knife to gently swirl the peanut butter and jelly into the cottage cheese mixture, without mixing it all the way in. Sprinkle the granola over the top.
Freeze the cottage cheese bark on a flat surface for 3-4 hours, until it’s firm. Slice or break into pieces and enjoy!
