Cozy Apple & Cottage Cheese Pancakes

Spiced with orange and cinnamon, these festive sheet pan pancakes are a perfect complement to family gatherings and holiday parties. The cottage cheese lends a rich, dense texture, making this recipe a great one-pan way to feed (and fill!) a whole party of people you adore.

Serves: 8-10

Ingredients:

4 eggs
1 cup Humboldt cottage cheese
1 tablespoon vanilla or extract
Juice and zest of 1 orange
2 tablespoons brown sugar
¾ cup flour
¾ teaspoon baking powder
2 teaspoons cinnamon
¼ teaspoon salt
2 small red apples or pears
1 teaspoon lemon juice
3 tablespoons pure maple syrup
3 tablespoons powdered sugar
Nonstick baking spray
Garnishes (optional): chopped walnuts or pecans, butter, Humboldt sour cream, powdered sugar, maple syrup

Directions:

Heat oven to 425 °F. Spray a 9”x12” baking sheet with nonstick baking spray.

In a large bowl, combine eggs, cottage cheese, vanilla, orange juice and zest, and brown sugar.

In a second bowl, whisk together flour, baking powder, cinnamon, and salt.

Add dry mixture to wet, stirring just until combined.

Spread batter evenly across sheet pan. Slice apples or pear very thin, toss in lemon juice.

Spread across the top of the sheet pan. Bake for 15 minutes, or until the pancake is light golden brown and center is puffed.

Mix together maple syrup and powdered sugar. Add just enough water, if needed, to thin the mixture to a drizzle. Drizzle over pancake.

Serve fresh out of the oven with your favorite pancake garnishes.

Make Ahead Tips: stir together dry ingredients and store in an airtight container. In the morning, stir together wet ingredients, add dry ingredients and follow the recipe to top and bake.
