Berry Chicken Salad

Serves: 6

Ingredients:

1/2 cup thinly sliced organic red onion
1/3 cup diced organic celery
1/4 cup torn fresh organic basil
12 ounces shredded skinless, boneless organic rotisserie chicken (about 3 cups)
1/2 teaspoon kosher salt, divided
1/2 cup plain Humboldt Creamery Organic Sour Cream
2 1/2 tablespoons fresh organic lemon juice, divided
1 tablespoon organic honey
1 cup fresh organic blueberries
1 cup fresh organic raspberries
1 (5-ounce) package organic baby arugula
2 teaspoons organic extra-virgin olive oil
1/4 teaspoon freshly ground black pepper

Directions:

In a medium bowl; combine first 4 ingredients (onion through chicken) sprinkle with 1/4 teaspoon salt.

In another bowl, combine sour cream, 1 tablespoon lemon juice, honey and stir with a whisk. Add sour cream mixture to chicken mixture; toss to coat. Gently stir in blueberries and raspberries.

Place arugula, remaining 1 1/2 tablespoons lemon juice, oil, remaining 1/4 teaspoon salt, and pepper in a bowl; toss to coat.

Divide arugula mixture evenly among 6 plates; top each serving with about 3/4 cup chicken mixture.
