Ice Cream Production Capabilities
Designed and installed to meet strict customer requirements, Humboldt Creamery commissioned its first Ice Cream Processing facility in July 1994 to be built at our Northern California location. The jewel of this process facility is the fully automatic Intec Variable Retention Time (VRT) Hardening System. The system is designed to accept a variety of common ice cream package sizes and freeze them based on specific product size profile. State-of-the-art Hoyer freezers and matched computerized loss-in-weight fruit feeders provide top quality product to the hardening system.

The package profiles are half-gallon squares, half-gallon squares/rounds, 56 oz rounds, nested pints and quarts, three-gallon bulk, four-quart plastic and five-quart plastic. Product filling capabilities include organic, nonfat, low-fat, sorbet, non-dairy, standard, premium, super premium and gourmet ice cream/frozen desserts.

All finished products meet strict quality assurance guidelines.

Ice Cream Novelties
In addition to container ice cream, Humboldt Creamery is a major producer of ice cream novelties. Our Los Angeles manufacturing facility is as modern and flexible as our carton-pack operation, and delivers the quality and variety our customers have come to expect. We offer our customers a full range of products including sherbets, sandwiches, bars, popsicles, cups and more.

Ice Cream Co-Packing Arrangements
Humboldt Creamery is at the technological forefront in the production of co-pack ice cream, using in-house recipes and customer-specific formulations. Our capabilities include organic, nonfat, low-fat, sorbet, non-dairy, standard, premium, super premium and gourmet ice cream and frozen desserts such as dairy and water treats, popsicles, sandwiches and a variety of individual cup sizes.

Packaging options include customer-designed originals in addition to several in-house brand lines. Finished co-pack ice cream can be packaged into a variety of container sizes including nested pints and quarts, half-gallon squares, half-gallon squares/rounds, 56 oz rounds, four-quart plastic, five-quart plastic and three-gallon bulk containers.

Container Ice Cream Plant Tour

Milk arrives fresh from the farm every day to be processed in our plant.

Each load of fresh milk is tested for quality and content before we process and transport it to huge silos.

The milk is pasteurized and separated into skim milk and cream.

In the ice cream manufacturing process, milk ingredients are combined with sugar and other ingredients to make an ice cream mix.

Flavors like vanilla, mint and strawberry are added to the ice cream mix.

Next, the ice cream mix goes into large freezers where it is frozen to the consistency of soft-serve ice cream (20°F).

Ingredients like nuts, cherries and chocolate chips are added from the ingredient feeders. Now the ice cream is ready to be put into containers.

The ice cream filling machines are capable of filling a variety of container sizes from pints to 3 gallons.

Finally, the ice cream is frozen to a 0°F core temperature in our state of the art hardening system before being shipped to our customers.
